This rice dish is very popular at malay weddings and homes.  The following recipe is my version of nasi minyak because my two boys prefer to have a chicken broth taste.  Best eaten with Ayam Masak Merah and Acar Timun.

Ingredients (serves 4 - 6):
5 cups basmati rice, to be rinsed and drained
4 cups chicken stock (boil a chicken leg or breast in a pot of water with a little salt) - add more if you prefer a softer rice
1 cup evaporated milk
salt to taste

Stir-fry Ingredients.
1 pce cardamom
3 cm piece cinnamon stick
1 pce clove
3 shallots, to be peeled and finely sliced
3 pips garlic, to be peeled and finely slice
2 cm fresh ginger, to be finely chopped

2 tbsp ghee
2 tbsp butter
2 tbsp cooking oil
two pandan leaves, to be tied into a knot

Garnishing:
roasted cashes nuts
raisins
fried shallots
chopped parsley
chopped spring onions

Method:
In a pot, heat ghee, butter and oil over medium heat.  Add all stir-fry ingredients and stir-fry until sliced shallots turn golden.  Add pandan leaves.


Then, add evaporated milk and chicken stock.  Bring to boil and season to taste.

Add rice and cook until all liquid has evaporated.  Reduce heat to low and cover pot. Cook until rice is done.  If using rice cooker, add rice to rice cooker and add pot contents.  Switch on rice cooker.

Serve hot garnished with fried shallots, cashes nuts, raisins, chopped parsley leaves and spring onions.

In my previous post, I mentioned that Ayam Masak Merah is a special dish for Malay weddings... and I shall continue with another 'Wedding Dish' ~ Nasi Minyak or Savoury Rice to compliment Ayam Masak Merah.

In villages or kampongs... Malay weddings are celebrated as a community activity. Relatives and neighbours would get together to help out in the preparations, cooking, serving as well as cleaning up after the big event.
Men are assign with back-breaking task such as chopping fire woods, put up tents, arrange tables and chairs while ladies help out in peeling onions, removing rice husks from the rice grains, clean and cut-up chickens and kilos of beef, boil hundreds of eggs, make litres of syrup.
Some would be in-charge of decorating the dais for the happy couple to sit and be blessed by elders and guests, and some would be in- charge with decorating the 'bridal' suite...
Big woks and pots are put to good use. Frying and sautéing would be done on the eve.. with major cooking are done early in the morning on the wedding day.

As a kid, I loved to tag along my mom to weddings. I remembered Mom would put on her best Baju Kurung (traditional Malay attire for ladies), adorned in her finest jewellery. Then we would make our way to the wedding...

I would sit with my mom at the table... waiting anxiously to eat. The 'Mentara' or waiters/ waitresses would placed the dish... one by one... 
I would go 'eyeing' each dish... a typical wedding feast would have Beef Korma, Ayam Masak Merah, fresh salad of cut-up pineapples, cucumber, onions and chillies, Beef Dhal Curry or Dalca... and finally plates of Nasi Minyak or Savoury Rice would be placed in front of me...  

The aroma of Nasi Minyak wafting through the air was so irresistable....

The sweet aroma of ghee... creamy savoury taste of the rice would make my tummy go wild. But I had to exercise self-control and refrained from reaching out... must not start eating before the adults... and if I 'accidently' did... I would get a good 'secret' pinch on my thigh....

Bunga Telur signifies Fertility... guests wishing the newly-wed ~ a happy marriage and be blessed with offsprings

Finally... when everyone done feasting and chatting... the host would  present us with their token of appreciation by handing out 'BungaTelur' ~ a nicely presented hard boiled egg wrapped in a beautiful sachet filled with 'Bunga Rampai' (Bunga Rampai is made out of semi dried finely sliced screwpine leaves mix with rose petals and few drops of rose water.. its the Eastern 'Pot-Pourri').

I would go home, happy and contented that I had my fill of wedding feast... and proudly carrying home my fragrant Bunga Telur...

Last but not least.... I am submitting this to Sharon of Test with Skewer for her Muhibbah Malaysian Monday.

Recipe (for 4-5) 

2 inch ginger julienne

2 tablespoon ghee

1 can evaporated milk (375ml)

1 screwpine leaves knotted

2 cups of rice (500ml)

1 cup of water (additional 1/4 cup if required)

3 cardamons

4 shallots - thinly sliced

a pinch of saffron

Bouquet garni

1 teaspoon fennel seeds

1 star anise

5 cloves

1 cinnamon stick

  1. Wrap fennel seeds, star anise, cloves and cinnamon in muslin cloth. Secure with cooking string.

  2. Wash and drain rice.

  3. Place the rice in Rice Cooker with the knotted screwpine leaves and Bouquet Garni.

  4. Heat up pan and  melt the ghee.

  5. Saute cardamon and shallots until fragrant.

  6. Add in julienne ginger.

  7. Add evaporated milk, water and season with salt.

  8. Gently pour the mixture in the rice cooker. 

  9. Add saffron on few spots on the 'about to cook' rice (approximate10 minutes before the rice is done) for the 'yellow' tinge.

  10. Gently fluff up the rice.

  11. Serve.

I went to the airport very early that day to catch my evening flight to Kuching as I wanted to avoid the after-office hours jam at around 5.00 p.m. and my plane would only be leaving at almost 7.00 p.m. While I was waiting, I felt a little hungry so I decided to drop by the airport outlet of our very own Sarawak franchise there…

Many have told me that their Kano chicken is very nice…

…but everytime I dropped by, I just could not resist ordering their fish sandwich/burger, one whole breadcrumb-coated fish fillet in a hot dog bun with coleslaw and all, that is definitely a class of its own, a cut above all the rest.

Well, this time around, I managed to order that and got one huge chunk of their broasted chicken…

…served with satay sauce. You can have a choice of this or sos pedas (spicy sauce). It was really very very nice and I  would say that I enjoyed it a lot.

It came with their very nice savoury rice…

…which is something like the Malay nasi minyak or the Indian nasi bryani, Melissa's favourite…with a bit of cucumber pickle…

…by the side. It would have been nicer if they had sliced it a bit more thinly, maybe half the thickness…and I wouldn't mind a little bit more of that.

This set is priced at RM9.80 which I would admit is not exactly cheap but one saving grace is the fact that all the items are priced exactly the same as their other outlets in the town unlike at all other Malaysian airports in the nation where they would hold their captive customers, those travelling on flights to or from somewhere, to ransom – I once had a plate of nasi lemak for almost RM25.00 a plate at KLIA, believe you me! @#$%^&*!!!

Ok lah. Ini kali pertama saya buat nasi minyak dan ayam masak gulai kawah. New achievement unlocked lah kiranya ni ;) Saya jarang masak nasi dekat rumah, sebab mak yang selalu masak dan tak harapkan saya masak nasi tsk tsk. Memang boleh bilang dengan jari la berapa kali ja saya pernah masak nasi. Kasihan betul kehidupan seorang Alia ini. Apa benda tah reti masak lauk tapi tak pandai masak nasi T_T

Saya share resepi di sini, untuk rujukan saya sendiri kalau tiba-tiba mood rajin datang suruh masak lagi nasi minyak ini. Ehem dan mana la nak tau kot kot Muhammad Adzeem tergerak hati nak masak dengan housemates dekat Parit Raja tu kan, boleh la ikut resepi yang telah daku sediakan ini ihik ihikk !

Bila nasi dah masak, seorang Alia terus tak sabar nak rasa. Alahaii sedap betul rasa dia, wangi pulak tu. Terus teruja nak letak pewarna pada nasi. Jadi apa yang dapat saya simpulkan di sini ialah, memasak nasi dan lauk pauk tidaklah sesukar mana sebab kita boleh adjust ikut citarasa kita. Tak macam buat kuih dan kek, ukuran semuanya kena tepat u_u

Saya masak nasi guna beras biasa saja. Resepi yang saya jumpa, paling senang lah rasanya, menggunakan beras Basmathi. Jadi saya adjust resepi ikut kesesuaian berasa yang saya guna. Jadi kalau tiba-tiba dekat rumah  hampa ada beras Basmathi yang cantik ituww, boleh la ikut resepi asal di sini

NASI MINYAK TERENGGANU - Hidangan untuk 5 orang

Bahan-bahan:

3 cawan beras biasa

3 1/2 cawan air

1/2 cawan susu cair

1 sudu kecil garam

2 helai daun pandan - disimpul

pewarna kuning

Bahan utk menumis :

1 sudu besar minyak sapi

2 sudu besar planta

3 kuntum bunga cengkih

3 biji buah pelaga

2 kuntum bunga lawang

1 inci kulit kayu manis

1/2 inci halia

3 ulas bawang merah

1 ulas bawang putih

(halia, bawang merah dan bawang putih dimayang)

Cara-cara :

  1. Beras dicuci kemudian ditoskan.
  2. Panaskan minyak sapi dan planta dalam periuk. Masukkan bahan tumis.
  3. Goreng hingga naik bau / kekuningan
  4. Masukkan beras dan daun pandan, kacau sekata.
  5. Masukkan air dan susu.
  6. Tanak hingga kering, kemudian masukkan pewarna kuning. Biarkan seketika.
  7. Kemudian gemburkan nasi guna garpu.
  8. Sedia dihidangkan bersama lauk pauk.
Saya gandingkan nasi minyak ini dengan ayam masak gulai kawah. Because daging is too mainstream. Dan saya tak guna rempah gulai kawah pun ihik ihikk ! Adoi dah pergi market pun terlupa nak beli rempah. Takpa, takpa. Jangan panik, jangan risau sebab resepi yang saya ikut dari blog LiNa Pg ni pun pakai rempah kari saja ;)

1/2 kg daging lembu hiris nipis (saya gantikan dengan ayam)

1 paket kerisik (40g)

1 paket kecil kari daging

1 labu bawang merah (kisar)

3 ulas bawang merah (kisar)

3 ulas bawang putih (kisar)

5 biji cili padi (saya tambah)

2 cm halia (kisar)

1 cm lengkuas (kisar)

5 biji cili padi (kisar) - saya tambah

2 batang serai (ketuk)

3-4 sb cili giling

3 helai daun limau purut (saya tak letak)

1 cawan santan pekat

Rempah 4 beradik

3sb gula merah

2 keping asam keping

minyak

garam

air

Cara-cara :

  1. Panaskan minyak, tumiskan rempah 4 beradik, bahan kisar, serai ketuk sehingga wangi dan garing
  2. Satukan cili giling dan rempah kari, jadikan pes, tumis hingga pecah minyak.
  3. Masukkan ayam dan kacau rata. Masukkan sikit air dan kacau rata lagi.
  4. Masukkan santan, kerisik, garam, gula merah, daun limau purut dan asam keping.
  5. Biarkan mereneh. Kacau sekali sekala (untuk mengelak hangit, tapi jangan kuat sangat nanti ayam hancur)
  6. Biarkan sampai pekat. Tutup api. Dah siap n_n
  7. Sedap dimakan dengan nasi atau roti. Oleh itu  lebihkan kuahnya supaya nanti bila lapar tetengah malam, boleh cicah dengan roti gardenia. 

Oh ya, jangan lupa buat jelatah sekali untuk lebih rasa kenduri. 


RESEPI JELATAH / ACAR DARAT / ACAR TIMUN DAN NENAS

Bahan-bahan : 

Timun

Nenas

Cili merah
Lobak merah

Bawang besar

Cuka

Gula

Garam

Cara-cara :

  1. Potong timun, nenas, cili merah, lobak merah, bawang besar. Potong ikut suka ;) Sebab ada sesetengah orang yang suka makan bila dipotong nipis. Kalau saya, saya suka besar sikit :D
  2. Satukan semua bahan dan gaulkan bersama sedikit cuka, garam dan gula.

I like to cook this savoury rice (Malay called this as Nasi Minyak) whenever I cook Ayam Masak Merah or Curry, because they are the best combo! Few bloggers came to my house during CNY, I cooked this rice to go with chicken curry that they brought.

Saffron 番红花

Add hot water to the saffron, then tint rice with this saffron water. So you can have nice yellow colour on the rice. 


The usual nasi minyak is cooked with ghee, evaporated milk and a lot of spices, but my version only use a bit of butter and use less spices, because my family couldn't accept too strong taste of spices and too buttery taste of rice. Also all ingredients are easy to find in my pantry.

Nasi Minyak (Savoury Rice with saffron) 番红花油饭

3 cups Basmati rice

5 and 1/2cup water

1 cinnamon stick

5 cardamoms
20g butter (salted)
3 shallots, sliced
2 garlics, sliced
4 pandan leaves ( screwpine leaves), knotted , optional
3/4tsp salt

A pinch of Saffron, soak in 1tbsp hot water for 10mins

Method

1. Wash and drain rice, add in water.
2. Heat up a non-stick frying pan, add in butter, shallots and garlics and sauté till aroma.
3. Add in cinnamon stick and cardamom and mix well. Remove from heat then pour the mixture into rice, add in salt and stir well.
4. Add in knotted pandan leaves, and cook the rice.
5. Once rice cooker switch to "warm" mode, sprinkle saffron water on few spots.
6. Once rice is cooked, fluff rice with chopsticks (you can see some rice tinted with yellow ).
7. You may serve with Ayam masak merak, chicken curry or etc, and Pickled cucumber, carrot and onions.

Boleh macam ni?

Hahaha!

Pagi tadi mintak suami hantarkan kami bertiga ke rumah Sarah.Motif adalah,harini 1st day Damia masuk kindy.Alhamdulillah dia langsung tak nangis.After I serahkan borang yang dah siap diisi kat teacher dia,I pun duduk la kat sebelah dia tapi selamba Damia tanya I ,"Bonda buat apa lagi kat sini?Pergilah balik".Hamboi!Hamboi!Hamboi!

Bangun awal harini prepared lunch untuk suami dan juga TEA + SNACK + LUNCH for Damia.Settle semua hal,angkat Dian,kejutkan Damia (dua2 tak mandi) terus kerumah Sarah suami hantar.Actually rumah Sarah dekat sangat dengan State School dan kindy Damia so planned harini nak lepak rumah dia.Sampai kat depan pintu rumah dia tgk jam baru 6.10 pagi tapi suasana dah terang-benderang macam jam 8 pagi.Sekarang memang siang panjang.Phew!Gila awal.Sarah bikin nasi goreng for breakfast.Sedap.Lepak2 jap,nak masuk jam 8,mandikan my kiddos yg busuk tu.

Jadi harini Sarah willing temankan I ke kindy so time I berurusan dengan teacher Damia,Sarah pegang si boolat Dian.I risau Damia nangis so I tunggu la dalam 2 jam jugak dan memang dibenarkan mana2 parents yg nak tunggu anak dia.Bila masuk time for TEA,nampak Damia selamba duduk dengan kawan2 makan cookies.Sikit tak heran pun dengan I.Dia jeling2 macam tu jer so I pun rasa macam dah puas hati,tinggalkan jer la dia so gerak balik rumah Sarah balik.

Bila sampai rumah duk la sembang ngan Sarah cakap pasal baking dan rasa macam teringin pulak nak makan kek coklat.Sarah apa lagi.Terus offer suh baking jer kat rumah dia.Sekali I tengok dia ada complete set untuk baking sekali dgn ingredient semua so dengan menggunakan resepi hantam sajalah,I berjaya la buat sebiji kek coklat desperado namanya.Hihihihi!Ropanya huduh tapi at least puas hatilah sbb dapat makan jugak.


Kek pertama yang I buat sejak duk sini : (

Lepas masak cake,Sarah nak masak nasi ayam tapi sekali halia pulak tak cukup.Jadi memandangkan I dah bukak satu tin susu cair just utk bikin cake ni,jadi ada berbaki lagi susu tu,so I volunteer nak masakkan nasi minyak.So harini kami lunch nasi minyak ayam merah.Alhamdulillah.

Lepas tu dalam jam 2.30 ptg,pergi ambil Damia kat kindy.Around 4 ptg suami pun datang jemput tapi mmg penat betul la harini ke hulu ke hilir.Tapi takpe la.1st day memang kelam-kelibut dan by tomorrow I pergi hantar Damia naik bus.Ptgnya ayahanda jemput.So esok I ada banyak masa nak berehat dan Jumaat suami akan pulang awal untuk solat Jumaat so dia awal2 cakap taknak bwk lunch sbb nak lunch kat rumah jer.Kat sini tiada halangan beragama dan dilarang sama sekali menghalang rutin agama orang lain.Dan sebab itulah boss suami tu faham  hari Jumaat adalah solat Jumaat bg lelaki yang beragama Islam so diorang bagi perlepasan pulang lebih awal.

Owh I love Friday.

Resepi Nasi Minyak Terengganu | Koleksi Resepiku

Koleksi Resepi Masakan ingin berkongsi resepi masakan iaitu Nasi Minyak Terengganu. Nasi Minyak Terengganu ini cukup terkenal di pantai timur khususnya di Terengganu. Selamat mencuba resepi masakan ini...

Bahan-bahan :

  • 1 sudu bawang mesin
  • 2 sudu Butter cup
  • 1 biji bawang besar di potong mayang
  • 1/2 tin susu cair
  • 3cm halia di ketuk
  • Minyak masak
  • Pewarna
  • 4 cawan Beras
  • 4 cawan air
  • 2 helai daun pandan
 Rempah kasar

  • 1 kuntum bunga lawang
  • 5 biji bunga cengkih
  • kulit kayu manis

Cara-cara memasak:

  1. Panaskan kuali, masukkan butter cup bersama minyak masak.
  2. Masukkan rempah kasar, tumis sampai naik bau.
  3. Masukkan bawang  mesin dan bawang besar yang  dimayang bersama halia .
  4. Tumis hingga bawang  sedikit garing. Masukkan daun pandan.
  5. Masukkan susu cair dan 1 cawan air. Biarkan ia mendidih sekejap.
  6.  Masukkan bahan yang telah mendidih tadi ke dalam periuk nasi elektrik. Masukkan 2 cawan lagi air.Biarkan ia mendidih seketika.
  7. Masukkan beras yang telah  siap dicuci ke dalam periuk.Masukkan sedikit pewarna.
  8. Masukkan sedikit garam.Tunggu hingga nasi masak.
  9. Sedia dihidang.

Assalamualaikum

Selamat malam semuanya. Kabareiiii, waras? Wah.......menjawa kita malam nie ye......poyo je, saje je pun, bukan tau pun cakap jawa. Bukan apa, saya teringat pulak masa masuk kelas siang tadi. Bila tanya2 sembang2 dengan budak2, dia orang bukan main loyar buruk lagi. Bila saya cakap hawau je!!! terkeluar perkataan ganas orang melaka, ganas sikit la........dia orang bantai balas cakap jawa pulak.....cehhhh!!!! saje je kan nak kenakan pengajar dia. Mentang2 dia orang gamai anak2 jawa termasuk cina jawa india jawa hihihi.........memang kelakar budak2 nie tapi bila datang perangai degil rasa macam nak kunyah je dia orang tu.

Dah lah! kita lupakan kisah pelajar2 tu. Kalau nak citer pasal pelajar2 nie memang sampai lusa pun tak habis. Hari2 pengajar masuk kelas, hari2 ler dengo pengajar citer macam2. Sian budak2 nie.........macam2 feel, boleh buat cik nye histeria hihihi.........Kita lupakan seketika cerita pelajar2 ilp nie, kita beralih pulak pada n3 saya malam nie........

Post malam nie resepi nasi minyak. Nasi minyak nie saya masak lawan dengan kurma ayam hari tu. Saya kalo nasi selain nasi putih macam ade kureng sikit. Makan memang makan tapi kata orang sekadar merasa sahaja bukan makan sungguh2 macam makan nasi putih. Kalau nasi ayam saya memang suka sangat2.

Nasi minyak nie pun saya main campak2 jer, janji suami saya suka rasanya, kira ok ler tu. Bahan2 pun yang mana ada. Suami saya memang suka kalo apa2 jenis nasi selain nasi putih. Dia memang berselera dan tak kisah dengan apa yang saya masak, tak cerewet. Cuma kalo masak apa2 sayur dia tak suka sebab dia tak minat makan sayur, sampai saya pun dah terikut2 stail dia tak makan sayur. NASI MINYAK

Bahan2:

3 cawan beras 
3 sudu besar minyak sapi
3 sudu besar kismis
1 helai daun pandan - siat2 dan simpulkan
3 sudu besar susu cair
Air
garam

Bahan tumis:

1 kuntum bunga lawang

3 kuntum bunga cengkih

1 batang kulit kayu manis

3 biji buah pelaga

1 labu bawang besar*

2 ulas bawang putih*
1 inci halia* (*dihiris)
1 batang serai - dititik
sedikit kismis
bawang goreng

Cara2:
1. Basuh beras macam biasa dan tapiskan.
2. Panaskan minyak sapi. Tumiskan bahan tumis hingga berbau wangi.
3. Masukkan beras dan kacau rata.
4. Masukkan susu cair, air, kismis daan garam. Sukatan air ikut macam biasa ditanak.
5. Setelah masak hidangkan bersama kismis dan bawang goreng.
